Recipe: Mocha Brownies

MOCHA BROWNIES

3/4 cup unsalted butter
4 ounces unsweetened chocolate
2 cups sugar
1 tablespoon instant coffee powder
2 tablespoons hot water
2 eggs
1 cup all-purpose flour
1 1/2 cups chopped walnuts, divided use (optional)

Heat oven to 350 degrees F. Coat a 13x9-inch baking pan with cooking spray.

Melt butter and chocolate in saucepan over medium heat. Remove from heat. Beat in sugar. Dissolve instant coffee powder in 2 tablespoons hot water and beat into sugar mixture. Let stand 10 minutes, until just warm to the touch.

Beat in eggs until smooth. Stir in flour and 1 cup walnuts if using, just until combined. Scrape into prepared pan. Sprinkle with remaining walnuts.

Bake in 350 degree F oven for 30 minutes or until a wooden pick inserted in center comes out clean. Cool completely on a wire rack.

Cut into thirds lengthwise and tenths crosswise.
