Recipe(tried): Molded Cranberry-Orange Salad

My family has enjoyed this one for years, Brenda. We prefer it made with raspberry gelatin, but cranberry is good too.

MOLDED CRANBERRY-ORANGE SALAD

1 pkg. (approx. 8 oz.) frozen cranberry-orange relish*, thawed
2 (3 oz each) or (one 6 oz) pkgs. raspberry or cranberry gelatin
1 3/4 cups boiling water
1 (20 oz.) can crushed pineapple, drained well, juice reserved
1/2 cup chopped celery
1/2 cup chopped pecans

Completely dissolve gelatin in boiling water. Add juice drained from the pineapple. Chill gelatin till the consistency of egg white.

Stir in the cranberry-orange relish, drained pineapple, celery, and pecans. Pour into gelatin mold or dish and chill firm.

*The brand of relish carried by my market is Indian Trail. The ingredients are ground cranberries, orange, and sugar. A simple homemade cranberry-orange relish could be substituted. The volume of 8 oz. relish is approximately 1 cup.
