MOLDED TUNA RING
1 (12 oz) can tuna; drained and flaked
2 hard-cooked eggs, chopped
1/2 cup stuffed green olives, chopped
1/2 cup celery; chopped
1 pkg unflavored gelatin (1 tbsp)
1/4 cup cold water
1 cup mayonnaise
1 cup sour cream
1/4 cup freshly squeeze lemon juice
2 tbsp minced fresh parsley
1 tbsp minced onion
1 tsp salt
TO SERVE:
salad greens
salad dressing
tomato; slices
Combine tuna, eggs, olives, and celery; set aside.
Soften gelatin in cold water for at least 5 minutes; dissolve over hot water.
Stir gelatin into mayonnaise and add sour cream, lemon juice, parsley, onion, and salt; combine with tuna mixture.
Spoon into a 1-quart mold or 6 individual molds, and chill until firm.
To serve, unmold on chilled plate and garnish with salad greens, salad dressing, and tomato slices.
