MOTHER'S APPLE CAKE
3 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 cups sugar
1 1/4 cups vegetable oil
3 eggs, beaten lightly
2 tsp. vanilla
3 large or 4 small apples, peeled and chopped
1 cup chopped nuts
Caramel Icing (recipe follows)
Line 2 (9-inch) layer cake pans with wax paper; grease and flour paper.
Sift flour, baking soda and salt together; set aside.
Mix sugar, oil and eggs with mixer; add vanilla. Add flour mixture. Fold in apples and nuts with spoon. Divide batter between prepared pans.
Put pans in cold oven. Turn oven to 325 degrees F and bake for 45 minutes. Remove from pans and set on a rack to cool.
When cool, fill and frost with Caramel Icing.
CARAMEL ICING
1/2 cup (1 stick) margarine
1 (1 lb.) box light brown sugar
1/4 cup evaporated milk
1 teaspoon vanilla
Place all ingredients for the Caramel Icing, except vanilla, in a saucepan. Bring to soft boil using candy thermometer.
Remove from heat. Add vanilla. Beat with spoon until spreading consistency.
Makes 1 (9-inch, 2-layer) cake
