Recipe: Blueberry Muffins from Betty Crocker's Picture Book (1950)

BLUEBERRY MUFFINS

1 1/2 cups sifted Gold Medal flour
1/2 cup sugar
2 tsp baking powder
1/4 cup soft shortening
1 egg
1/2 cup milk
1 cup fresh blueberries (or 3/4 cup drained canned blueberries)

Preheat oven to 400 degrees F.

Sift dry ingredients. Blend in shortening, egg, and milk with pastry blender or fork until ingredients just come together - as few strokes as possible. Batter should look lumpy. Fold in blueberries last.

Fill (greased or paper-lined) muffin tins 2/3 full.

Bake 20-25 minutes, until just golden brown. Remove muffins from tins immediately - do not let them cool in the pan.
