BACON CHEESE SCONES
1 3/4 cups sifted all-purpose flour
1 cup Cheddar or Swiss cheese
1 Tbsp. baking powder
6 slices crisp-cooked bacon
1/2 tsp. baking soda
1 egg
1/2 tsp. salt
1/2 cup buttermilk
6 Tbsp. butter
Heat oven to 425 degrees F. Lightly grease cookie sheet.
In bowl, combine flour, baking powder, baking soda and salt. Add butter (cut into chunks); work it into dry ingredients until mixture resembles coarse meal. Stir in grated cheese and crumbled bacon.
In separate bowl, mix egg and buttermilk together; add them to dry ingredients. Mix until soft dough forms.
Roll dough on floured surface to 1/2-inch thickness. Cut out circles with cookie cutter. Arrange scones on prepared cookie sheet.
Bake 12-15 minutes or until scones are browned and well risen.
Makes 12 scones
