11 oz. cold water
2 tbsp margerine
1 cup white flour
1 1/2 cups whole wheat flour
1/2 cup seven grain cereal (to which flax seed has been mixed in)
1 tablespoon wheat gluten
1 tablespoon powdered milk
2 tablespoons sugar
1 1/2 teaspoons salt
2 1/2 teaspoons bread machine yeast
Set on "French bread" cycle.
Meanwhile after you have started this, prepare the following:
1/4 cup wheat berries (found at health food/specialty food store)
1/2 cup boiling water in a small saucepan
Add the wheat berries (whole wheat kernels) to the boiling water in the saucepan, and put the lid on. Turn the heat down to minimum and let it simmer for 90 minutes.
Dump the cooked wheat berries into a seive and run cold water over them to cool them off. Shake the seive to get rid of as much excess water as possible.
When the bread machine beeps at mid cycle (as if you were adding raisins or nuts) throw the wheat berries in. On my machine this is after an hour and 40 minutes.
The bread is chewy, crunchy, nutty and flavorful. (And good for you too!)
