Recipe: Mussels Baked in Garlic Butter for Therese/California

Mussels Baked In Garlic Butter

3/4 c softened sweet butter
juice of 1/2 lemon
grated peel of 1 lemon
1/3 c minced fresh parsley
4 crushed garlic cloves
3 tb minced shallots
white pepper
nutmeg
4 dozen mussels, well scrubbed, steamed & cooled

Combine butter with lemon juice, lemon peel, parsley, garlic & shallots; season to taste with pepper & nutmeg. Combine butter-herb mixture in food processor fitted with steel blade; process until well blended. Arrange mussels, in their shell halves, in shallow individual baking dishes; spread each with some mixture; run under hot broiler 2-3 minutes, watching carefully. Or bake in 425 F oven for 10 minutes or until bubbly.
