Recipe(tried): Mustard Rye Bread, New York Rye, Dark Pumpernickel (bread machine)
Breads - Bread MachineHi, Chris. I love rye bread and here are some recipes for you. My favorite is the mustard rye. It goes beautifully with smoked salmon, capers and finely chopped onion.
I am listing ingredients for both 1 pound and 1 1/2 pound loaves. The 1 1/2 pound proportions are in parentheses.
Mustard Rye Bread

3/4 cup water (1 1/4 cups)
3 tablespoons dijon mustard (1/4 cup)
1 tablespoon butter (1 tablespoon)
1 1/3 cups bread flour (2 cups)
1 cup rye flour (1 1/2 cups)
1 tablespoons gluten flour (2 tablespoons)
2 teaspoons brown sugar (1 tablespoon)
1/2 teaspoon caraway seed (1 teaspoon)
1/2 teaspoon salt (3/4 teaspoon)
