Recipe(tried): My Favorite Chicken Salad with Variations - Thank You

I think I will use my favorite chicken salad recipe and shred the meat instead of cutting it into bite-size pieces. Add the red grapes, and use candied walnuts and serve with seasonal fruit.

I poach my chicken in water with salt & pepper, a chunk of carrot, a stalk of celery, a quarter of an onion and other seasonins like celery leaves (dried or fresh), celery seed, etc. Then when cooked, I remove the chicken and let it cool, remove the skin and debone the breasts. And then mix with thinly sliced celery and a little diced onion. Season as desired.

If you strain the poaching broth you have a nice chicken stock for use in other recipes. Thanks for the information. Also only use Hellmann's mayonnaise or Best Foods on the West Coast (same producer).
