Recipe: Nutmeg Cookies

Nutmeg Cookies

Makes 48

4 cups flour
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
3/4 cup vegetable shortening
2 cups sugar
2 large eggs
1/4 cup milk
1 1/2 teaspoons vanilla extract
1 teaspoon grated lemon zest

Combine the flour, baking powder and nutmeg.

In a large bowl, cream the shortening and sugar. Beat in the eggs. Beat in the milk and vanilla. Beat in the lemon zest. Gradually blend in the dry ingredients. Cover and chill for 4 hours.

Preheat oven to 375 degrees. Lightly grease cookie sheets.

On a floured surface, roll out the dough to a thickness of 1/8-inch. Using 2-inch cookie cutters, cut and place 1" apart on prepared cookie sheets.

Bake for 10-12 minutes or until lightly colored. Transfer to wire racks to cool.
