Recipe(tried): OAMC ideas for summer

This may be late for buckeyegal's needs, but maybe someone will find useful. Easiest thing I do as far as OAMC in summer is to cook in bulk on grill. Only 2 of us so even if fitting only 8-10 chicken breast quarters on grill at a time will last us 4-5 meals. We did this with BBQ chicken quarters, froze what we didn't use that night, but appreciated the grilled taste when later only had time to microwave. Easy concept could be used otherwise.

Also, when bought chuck steak real cheap, just rinsed it & added marinade to steak in freezer bag. When we know we will be grilling, only have to take it out day or 2 before (longer it marinates the better as far as I'm concerned), and don't have to think about making up marinade each time. BTW, a marinade I really like is the Lemon-Chuck Steak recipe from the red & white checked cookbook (always forget, is that Better Homes cookbook?).

Last idea I use is when I buy already cooked ham, or when I have leftovers, I make sure to chop some to 1/4 - 1/2 " cubes and freeze in meal-sized portions. A super easy meal is to boil macaroni or other salad-type pasta, place frozen peas or broccoli in colander with ham cubes and pour cooked pasta over (hot water thaws veggies and meat). Toss with ranch or caesar dressing, and your done (if made in a.m., even better. (Ham stored this way is easy to take out to make an omelet or ham salad, etc.). Good luck.
