ORANGE BLUEBERRY STREUSEL CAKE
1/4 cup sugar
2 tbsp all-purpose flour
2 tsp orange rind; grated
1/2 tsp ground cinnamon
1 tbsp margarine
1 (16 1/2 oz) pkg light wild blueberry muffin mix
3/4 cup fresh orange juice
1 tsp vanilla extract
1 egg white
Preheat oven to 400 degrees F. Coat an 8-inch square baking dish with nonstick cooking spray.
Combine sugar, flour, orange rind, and cinnamon in a bowl; cut in margarine; set aside.
Remove blueberries from muffin mix box. Drain and rinse blueberries; set aside.
Combine muffin mix, orange juice, vanilla, and egg white in a bowl, stirring just until dry ingredients are moistened. Gently fold in blueberries. Pour batter into prepared baking dish. Sprinkle sugar mixture over batter.
Bake at 400 degrees F for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
