Oatmeal Drop Cookies with Coconut

These are my husband's all time favorite cookie!

Sift:
1 1/4 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt

Cream:
3/4 cup butter
Gradually add:
1/2 cup sugar
1 1/2 cups packed light brown sugar
Add:
2 eggs, beaten
1 tsp. vanilla

Blend in sifted dry ingredients.

Stir in:
2 1/2 cups quick cooking oats
1 cup nuts (or raisins)*
1 cup coconut

Drop by rounded teaspoonfuls onto lightly greased baking sheets. Make larger for more chewiness.

Bake at 375 for 12-15 minutes. If using the rounded teaspoonfuls, I found 8-9 minutes was best. These cookies come out on the crisp side. A larger "drop" takes the 12 to 15 minutes and this way they are chewier.

*We make ours with macadamia nuts.
