Susannahoh (09:03:41) : CHICKEN LONG RICE

Chicken Long Rice is traditionally served at Hawaiian luaus, along with many other native dishes. Long rice is also called bean threads or glass noodles. It can be found in Asian markets, or in the ethnic section of a supermarket. Hawaiian salt is a Hawaiian sea salt processed from sea water using traditional, time-honored techniques. If you would like the dish to be authentic as possible, use rock salt, but any salt may be used.

2 pounds chicken thighs
2 bundles long rice (soak until soft, cut into desired length)
4 cups water
1 tablespoons Hawaiian salt
MSG
3 stalks green onion (1-inch lengths)
2 teaspoons sugar
of a 4-in. piece fresh ginger (optional)

Debone each thigh. Slice into four or five pieces. Boil water and add chicken. Add Hawaiian salt, dash MSG and sugar. Add long rice. Cook until tender. Add green onions. Serve.

1 cups chicken, cooked and cubed
1 (14-ounce) package of your favorite mixed vegetables (thawed)
1 (10 ounce) can Campbell's Cream of Chicken and Herb soup
cup milk
1 egg
1 cup Bisquick baking mix
teaspoon rosemary
teaspoon thyme
Salt and pepper to taste

Preheat oven to 400 degrees. In a nine-inch pie plate mix chicken, vegetables and soup. Sprinkle with thyme, rosemary, salt and pepper. Mix milk, egg and baking mix, Pour over chicken mixture. Bake thirty minutes or until golden.
Yield: 4 servings
