Recipe(tried): Oscar Taylor's Zucchini Muffins

OSCAR TAYLOR'S ZUCCHINI MUFFINS/BREAD

4 eggs
1 1/2 cups sugar (dark brown is better)
1 Tbsp. vanilla
1/2 cup safflower oil or vegetable oil
2 cups loosely packed grated zucchini
2 cups sifted white flour
1 Tbsp. ground cinnamon
1 Tbsp. baking soda
1/2 Tbsp. salt
1/2 cup chopped nuts (optional) walnuts or pecans

Beat eggs until frothy. Add sugar, vanilla and oil and beat until lemon colored and thick. Stir in zucchini, flour, cinnamon, soda and salt; beat for 5 minutes.

Fold in nuts; pour into greased and floured muffin tins.

Bake at 350 degrees F for 20-25 minutes.

Makes 18 muffins
