Recipe: Old Faithful (baked rice and pork chops)

This is from a community cookbook called Sugar and Spice and Everything Nice.

OLD FAITHFUL

4 pork chops
2 Tablespoons oil
6 Tablespoons uncooked rice
1 large onion. sliced
2 ripe tomatoes, sliced
1/2 green pepper, sliced into rings
Salt and pepper
1 can chicken broth
1 tiny pinch marjoram
1 tiny pinch thyme

Brown chops in oil.

Put raw rice in bottom of greased casserole. Lay browned chops on rice. Top each chop with slices of onion, tomato and green pepper. Salt and pepper to taste. Pour broth over all. Sprinkle with marjoram and thyme.

Cover and cook for 1 hour at 350 degrees F.
