Prissymom, I grew up with this recipe that was passed down from my moms family, in Chattanooga Tn.. I hope you enjoy it as much as we do.
We make chicken soup with 2 chicken breasts, take your stockpot and after u rinse your chicken, put in the pot and boil, removing all the gunk that floats to the top, boil this for about 20 minutes.
After 20 minutes, take the chicken breast out and transfer to a clean stockpot, and add a bunch of (washed) fresh dill, peeled carrots, celery with their leaves, I also chop some celery and add that, quarter a large onion, and add that to the soup. Slow Boil this for about 2 hours, you may need to add more water, I put about 5 chicken cubes (broth) into the pot.
After cooking, take the 2 chicken breasts out and cool on a plate. While that is cooling, take the celery stalks out, add salt to season. I make separately, Pennsylvania Dutch thin egg noodles. Soup is excellent...
Get back to your cooled chicken breast, debone and shred, into a bowl. Take some chopped celery, chopped bread and butter pickles and some chopped scallions to taste, mix this with miracle whip (I start off with a couple tablespoons) and fold all together, if you over stir it, it will be mushy...
This salad is so good, goes great also with your soup. enjoy!!!
