Recipe: Old Fashioned Vegetable Soup in Crock Pot (using beef bones or short ribs)

OLD FASHIONED VEGETABLE SOUP IN CROCK POT

2 pounds soup bones or 1 lb. beef short ribs
8 cups water
1 small onion, chopped
1 cup diced carrots
1/2 cup diced celery
1 teaspoon celery salt
1 teaspoon salt
2 cups diced potatoes
1 (1 pound) can whole kernel corn, undrained
1 (1 pound) can tomatoes, cut up
2 small turnips, peeled and finely chopped

Place the meat, 8 cups water, onions, carrots, celery and salts in crock pot.

Cover and cook on LOW for 4-6 hours.

Remove bones or ribs from the soup; chop meat and return to pot. Add potatoes, corn, tomatoes and turnips to the soup.

Cover and cook on HIGH for 2-3 hours more.

Makes 10-12 servings
