Recipe(tried): Ollo Rustico (Rustic Chicken)

Here's an Italian rustic version of chicken breasts, if you liked Grecian chicken, you'll love this one...these are chicken breasts stuffed with spinach, nutmeg, spices, pine nuts and fontina cheese. Rolled into a bundle and browned with a white wine sauce drizzled over, serve it with Julienned Carrots and Zucchini, a tossed green salad and garlic bread. Later on while watching "Who Wants To Be Millionaire"? (My new favorite show) you can enjoy Millionaire's Pie with a nicve cuppa! Enjoy!!

Pollo Rustico (Rustic Chicken)

8 chicken breasts
2 10 oz. pkgs. frozen spinach, thawed & drained well
5 T. olive oil
1 medium onion, chopped
3 garlic cloves, minced
1 c. diced Fontina cheese
1/2 c. pinoli (pine nuts)
1/2 t. grated nutmeg
1/4 t. salt
1/4 t. black pepper

White Wine Sauce
3 T. butter
2 T. flour
2/3 c. chicken broth
1/2 c. white wine or vino seco
1 t. lemon juice
salt and white pepper to taste

Flatten the breasts so that you can stuff and roll them up.

In a large skillet, saute the onion and garlic in 2 1/2 T.olive oil til onions are golden. Add the spinach and stir to mix well. Put mixture in a bowl and add cheese, and spices. Mix well and spread mixture on flattened breasts. Roll each one up jelly-roll style and tie with a string.

Return to skillet and on med. high hea, heat the reamining 2 1/2 T. oil and brown the rolls well about 7 mts. Remove to a plate and keep warm.

Reduce heat to med. and add butter, when melted add flour and cook stirring to make a roux. Slowly add the wine and broth, whisk till smooth. Remove from heat and stir in lemon juice and salt and white pepper. Drizzle sauce over chicken roll.

Julienned Carrots and Zucchini

2 carrots, washed and julienned
2 zucchinis, washed peeled and julienned
2 tblsp. butter
1/4 cup sugar
1/2 cup water

Melt the butter in the water and dissolve the sugar in it. Add the julienned veggies and heat to medium until tender.

Millionaire's Pie

Makes 2 pies

1 small can mandarin oranges, drained well
1 15 1/4 oz. can crushed pineapple, drained well
1 " " lite sliced peaches, " "
1/4 c. lemon juice
1 can condensed milk
1 12 oz. cont. Cool Whip
2 graham cracker pie crusts
almonds or coconuts for garnish

Fold all the above ingred. together. Blend well. Pour into pie shells and garnish. Refrigerate.
