Recipe: Peanut Butter and Jelly Ice Cream Sandwiches

PB&J ICE CREAM SANDWICHES

8 tsp strawberry jam
16 soft peanut butter cookies
1 pint vanilla ice cream, softened slightly

Spread 1 teaspoon jam onto bottoms of 8 cookies.

Spread 1/4 cup ice cream each onto bottoms of plain cookies. Top with jam-spread cookies. Work quickly to avoid melting ice cream, then wrap sandwiches tightly in plastic and freeze 6 hours.
