ONONDAGA SALT POTATOES

1 1/2 cups kosher salt or unrefined sea salt
2 pounds very small new potatoes, unpeeled
6 tablespoons unsalted butter
Black peppercorns in a mill
Fill a medium pot with 2 quarts water, add the salt and set over high heat. Stir to dissolve the salt, add the potatoes and bring to a boil. Reduce the heat to medium-low and simmer the potatoes until they are completely tender when pierced with a fork, about 15 to 20 or 25 minutes, depending on the size of the potatoes.
Drain thoroughly, place in a large bowl, add the butter and toss lightly until the butter is melted. Serve; pass the pepper.
Makes 4-6 servings
