Sarah, this a a potato casserole that my family loves..it is wonderful Happy Holidays to you!
POTATO SUPREME CASSEROLE
4 large potatoes
1/2 cup butter
1 1/2 cup light cream (half & half)
2 tsp. salt
1/2 lb. cheese (American or Velveeta)
1/4 tsp. pepper
1 cup sour cream
4 or 5 slices bacon crispy fried
Boil potatoes until tender. Cool and chill several hours or overnight.
Remove skins and grate.
Heat butter, cream, salt, pepper and cubed cheese in sauce pan, stirring until cheese is melted. Mix in potatoes. Pour into greased 2 quart baking dish.
Bake 350 degrees 30-40 minutes. Remove from oven and top with sour cream and crumble bacon on top. Bake until sour cream is warm, about 15-20 minutes.
