Open Curried Chicken Salad Sandwich

Full Choice Plan..Makes 1 Midday or Evening Meal serving.

1 tablespoon reduced calorie mayonnaise
1 tablespoon plain unflavored yogurt
1 teaspoon lemon juice
1/8 teaspoon curry powder
4 ounces skinned and boned cooked chicken, diced
1/2 small apple, pared, cored, and diced
6 large seedless green grapes, cut into quarter
Dash each salt and white pepper
2 slices whole wheat bread, toasted

In medium bowl combine mayonnaise, yogurt, lemon juice, and curry powder. Stir in chicken, apple, and grapes; season with salt and pepper. Spread half of chicken salad on each slice of toast.

Each serving is equivalent to: 1 1/2 serving Fats; 1/8 serving Milk; 4 ounces Poultry; 1 serving Fruits; 2 servings Bread. Per serving 527 calories, 39 g protein, 13 g fat, 40 g carbohydrate, 548 mg. sodium
