Recipe: Orange Curried Chicken (using frozen orange juice concentrate)
Main Dishes - Chicken, PoultryORANGE CURRIED CHICKEN
2 chicken breasts, halved (4 1/2 breasts, 2 per chicken)
1/4 cup frozen orange juice concentrate, thawed
1 Tbsp. lemon juice
1 tsp. curry powder
1/4 tsp. salt
Paprika (optional)
Remove skin and all visible fat from chicken breasts. Place in baking dish. Wash hands, cutting board and utensils in hot soapy water after handling raw poultry.
Combine orange juice, lemon juice, curry, and salt. Pour over chicken and cover.
Bake 40 minutes at 350 degrees F.
Sprinkle with paprika, if desired, and serve with brown rice.
MICROWAVE DIRECTIONS:
Combine ingredients as above. microwave on full power for 15 minutes, turning and basting halfway through cooking time.
