I found this recipe on Kroger's Raisin Bran cereal box. I like eating it coz it makes me feel good knowing that there's only 1 Tbsp of oil in it. Happy baking!
1/2 cup egg substitute ( i prefer real eggs)
3/4 cup orange juice
1 Tbsp vege oil
2 cups Kroger Raisin Bran cereal (or something similar)
3/4 cup pitted dates/prunes/whatever dried fruits
1 cup all purpose flour
1/4 cup brown sugar (can be reduced if you like)
2.5 tsp baking powder
Heat oven to 400. In a medium bowl, beat egg, orange juice & vege oil together. STir in cereal, dates; let stand 5 minutes. In a large bowl, combine remaining ingredients; stir in cereal mixture just until dry ingredients are moistened. Spoon into a greased or paper-lined 12 cup muffin pan, filling cups 2/3 full. Bake for 15 min or until toothpick inserted in centre comes out clean. Cool slightly b4 removing from muffin pan.
