BOWL OF BERRIES MUFFINS
1 1/2 cups hot milk
1 cup oats
2 cups flour
4 tsp baking powder
1/2 cup brown sugar
1 tsp salt
1 egg, beaten
1/4 cup butter, melted
1 cup blueberries or raspberries or sliced strawberries (or combination)
Pour hot milk over the oats and let stand for 10 minutes.
Preheat oven to 375 degrees F. Grease 12 muffin cups.
In bowl, mix together the flour, brown sugar, baking powder, and salt; set aside.
Beat the egg and melted butter into the oats.
Pour the wet ingredients over the dry ingredients and fold until just mixed. Scoop the batter into prepared muffin tins and tuck the berries into the batter, pushing them down slightly.
Bake at 375 degrees for 20 to 25 minutes.
Makes 12 to 14 muffins
