Recipe: Orange Rice (100 servings)

Orange Rice (serves 100)
Source: Florida Department of Citrus

1 2/3 gallon water
3/4 cup Florida orange juice frozen concentrate
2 2/3 tbsp. salt
3/4 gallon white rice
1 1/2 cups dehydrated onion flakes

In full-size hotel pan(s), combine water, juice concentrate (thawed), dehydrated onion flakes, and salt. Bring to boil, add rice. Remove from heat. Cover and bake in 350F oven for 20 minutes. Remove and let stand covered for 5 minutes before serving.

SERVING SIZE: 3.13 oz. - wt
YIELD: 100 servings yields 20 pounds

SPECIAL TIPS: Add green onions, peas or shredded carrots for color.
