Recipe: Orzo Pasta with Shrimp (and homemade Ranch Dressing)

ORZO PASTA WITH SHRIMP

1 (15 ounces) can corn, drained
1 pound of cooked shrimp, bite-size pieces
1/2 cup chopped red onion
1 cup chopped red bell pepper
1/2 teaspoon salt
1 teaspoon basil
Ranch salad dressing (recipe follow)
1 1/2 cups uncooked orzo

In a large bowl, combine all ingredients except orzo. Stir well.

Cook the orzo according to package directions and drain. Add orzo to the bowl and toss to blend ingredients completely.

Cover and chill until serving.

RANCH DRESSING

1/2 cup mayonnaise
1/2 cup sour cream
2 teaspoons minced onion
1 teaspoon dried chives
1/2 teaspoon dried dill weed
1/2 teaspoon dried parsley
1/2 teaspoon oregano
1/2 teaspoon Worcestershire sauce
1/8 teaspoon garlic salt
1/8 teaspoon ground black pepper

In a medium bowl, whisk together all ingredients for the Ranch Dressing. Cover and refrigerate for 30 minutes before serving.

Makes 8 servings
