Recipe(tried): Oven Roasted Chicken

Yesterday, after working outside in the yard most all day, we came in to smell the wonderful aroma of chicken baking. It had cooked slowly, slowly for several hours and it was nearly done. With the bird, I made mashed potatoes and gravy along with freshly cut carrots that had been steamed in thier skins as well as some whole cranberry sauce. It was a comfort food meal for sure!!
This recipe came to me through my family...it was Gram's and Mama made it the same way as well. It is wonderfully moist on the inside and crispy crunchy on the outside. The stuffing can be anything you would like it to be, premade or your very own. Mama said there was no need to make a Big Career of baking a bird, as simple was best!! She did say, however, that for a holiday meal, the stuffing might want to be "spruced up" a bit!!

Roasting bird (I used a 6 lb. chicken)
Stuffing
Butter
Flour
Salt and pepper to taste
*I used a bottled Southwest Seasoning this time and no salt and pepper

Wash and dry the bird under cold water. Springkle cavity with the seasoning or salt.
Place in buttered roasting pan.
Pour the stuffing loosely into the cavity and a bit in the neck as well.If some falls out, not to worry, as it will give the gravy a nice flavor.
Give the bird a quick rub with butter. Lightlty salt the outside with your seasoning or regular salt. Sprinkle flour over bird and pan and place into a preheated 325 oven, uncovered, breast up. You needn't tie the legs! Baste bird with the liquid in the once in awhile. If your liquid dries out, add a bit of boullion or some butter and warm water. That's it!
Here's the secret to it...let it cook longer at a lower temp! I left my 6 lb. bird in the overn for about 3 1/2 hours at 325F, and I have left a large turkey in the oven for about 8 hours doing the same. Experience seems to be the best teacher with roasting fowl, but slow works well with this recipe!
For my stuffing (sorry but I didn't measure), I mixed up breadcrumbs, melted butter, seasonings, warm water and added chopped onion, celery and lastly some chopped macadamias!
An easy dinner and enjoyed by all!!
