and you are quite right; some things definately come out better kept simple. Crazy as it might sound i have never roasted my own bird yet - too busy cooking other stuff and other half is veggie so not too much opportunity. But this year i want to do a pre christmas dinner for close friends before we all go off to visit family and think that this sounds just perfect! Thanks for sharing!
