Recipe: Party Turkey Cacciatore (from My Great Recipes Cards, 1985)

MY GREAT RECIPES PARTY TURKEY CACCIATORE

"Boneless turkey breast is available at meat counters today and lends itself to a variety of cooking flavors and styles. This is a classic dish with Italian flavors, a change from other spaghetti toppings."

1 1/4 lbs. boneless turkey breast
3 Tbsp. olive oil (or vegetable oil)
2 cloves garlic, minced or pressed
1 small onion, sliced
1 green bell pepper, sliced
3/4 lb. fresh mushrooms, sliced
1 (16 oz.) can whole tomatoes
1 (6 oz.) can tomato paste
1 Tbsp. dried oregano leaves
1/4 cup chopped fresh parsley
Salt and ground black pepper (to taste)
Hot cooked spaghetti (for serving)
Parmesan cheese (for serving)

Cut turkey into 1/2-by-2-inch pieces.

Heat oil in large heavy skillet. Add turkey. Brown over high heat. Remove and keep warm.

Add garlic, onion, green pepper and mushrooms to the pan. Saute over high heat until vegetables are tender.

Add tomatoes, tomato paste and oregano. Simmer for 30 minutes.

Return turkey to pan. Simmer for 10 minutes.

Meanwhile cook spaghetti according to package directions to al dente.

Taste turkey mixture. Add salt and pepper if desired. Sprinkle top with fresh parsley. Serve over portions of spaghetti. Pass Parmesan cheese at the table.

Good served with: Caesar salad and hot, buttered Italian style bread. For dessert serve fruit and cookies.

Hi Tray,

I just received a used set of My Great Recipes cards that I purchased. The set has hundreds of cards but, like most sets sold used, is incomplete. So far, this is the closest cacciatore reicpe that I've found. Maybe you can tell me if the ingredients are the same except for the turkey and if the one you're looking for uses boneless chicken breast or chicken pieces? I haven't run across anything like the beef recipe you're looking for in the cards yet, but I'll keep looking.
