Recipe: Peach Power Bars (using whole wheat flour, oats, coconut and almonds)

FOR THE BASE:
1 cup whole wheat flour
1/2 cup quick-cooking oats
1/3 cup granulated sugar
1/4 cup sliced almonds
1/3 cup margarine or butter
FOR THE TOPPING:
3 cups peaches, pitted sliced thin, drained
1 tablespoon lemon juice
2 tablespoons granulated sugar
Pinch ground cinnamon
1 egg, lightly beaten
1/2 cup flaked coconut
1/4 cup sliced almonds
1 teaspoon almond extract
TO MAKE THE BASE:
In a food processor combine flour, oats, the 1/3 cup sugar and almonds; process until well combined. Add margarine and process until crumbly. Press mixture firmly into 11- by 7-inch pan.
Bake at 375 degrees F for 15 minutes. Remove from oven.
FOR THE TOPPING:
In a large bowl combine peaches and lemon juice; pour over base.
Stir together the 2 tablespoons sugar and cinnamon, sprinkle over peaches.
In a separate bowl, mix together egg, coconut, almonds and almond extract. Drop by spoonfuls over peaches.
Return to oven and bake 30 to 35 minutes longer.
Makes 12 bars
