Recipe(tried): Peach Salsa

Peach Salsa

6 cups Peaches, pitted and chopped
11/4 cups chopped Onion
1/2 cup Jalapenos, finely chopped
1/2 cup Cilantro, chopped
1/2 cup White Vinegar
2 Tablespoons Honey
1 clove Garlic, finely chopped
11/2 tablespoons ground Cumin
1/2 teaspoon Cayenne Pepper

Combine all ingredients in a large pan and bring to a boil. Stir constantly to prevent scorching. Boil gently, stirring frequently for 5 minutes. Pour into jars, leaving 1/2-inch head space. Wipe jar rims. Adjust lids and process in a hot water bath. Process Time(minutes) for all Alitudes

Half Pint 15 Minutes 20 Minutes
Full Pints 15 Minutes 20 Minutes

Makes 7 to 8 half- pint jars. Per 1/4 cup serving: 19.9 calories; 0.1 fat(2.8% calories from fat); 0.4g protein, 5.0g cabohydrate, 0mg cholesterol; 2mg sodium
