Recipe: Pear Chutney

Preserving - Jams, Jellies
I have been told that I may post this recipe if I give the name and author of the book. The recipe comes from "Company's Coming- Preserves" recipe book by Jean Pare. I love her books and have all that have so far been published. Hope this is what you are looking for. So here it is....

PEAR CHUTNEY

8 cups Pears, peeled, cored & diced
1 cup Onion, finely chopped
2 cups raisins, coarsely chopped
3 cups white sugar
1 tsp. salt
2 tsp. celery seed
1/4 tsp. cayenne pepper
1/4 tsp. curry powder
1/4 tsp. paprika
3 cups white vinegar

Mix all ingredients in large pot. Stir over medium heat until sugar dissolves. Bring to a boil. Simmer about 1 hour 10 minutes until thick. Stir more often as it thickens. Fill hot sterilized jars to within 1/4" of top. Seal. Makes 5 half pints.

Serve this fruit chutney with poultry and pork. Try this spooned over cream cheese. Serve with crackers for a different appetizer.
