Recipe: Pears Poached in Earl Grey Tea (serves 2, microwave, Good Food magazine 1980's)
Desserts - FruitPEARS POACHED IN EARL GREY TEA
1 cup boiling water
2 Earl Grey tea bags
1 strip (2 x 1/2-inch) lemon zest (colored part of peel)
2 Tbsp. honey
2 tsp. fresh lemon juice
1 pear, pared, halved, cored
2 lemon slices, for garnish
Fresh mint leaves, for garnish
Combine the 1 cup boiling water, tea bags, lemon zest, honey, and lemon juice in 2-cup glass measure. Cover with saucer and let steep for several minutes. Remove tea bags and stir.
Place pear halves, cut sides down, in 9-inch glass pie plate. Pour tea mixture over and around pears. Cover with plastic wrap, leaving one corner open for vent. Microwave on HIGH power 1 minute. Turn pears over and microwave, covered and vented, until pears are tender when pierced with fork, 2-4 minutes longer.
Remove pears from liquid and let cool to room temperature. Discard tea mixture. Refrigerate pears until cold, at least 2 hours.
Serve cold, garnished with lemon slices and mint.
