I'm getting ready to cook for this evening and decided on this casserole. I thought maybe some of you would enjoy it also.
TASTY PEROGIE CASSEROLE
15 lasagna noodles, cooked
CHEESE LAYER:
2 cups cottage cheese
1 egg, beaten
3/4 tsp. onion salt, divided use
POTATO LAYER:
4 cups mashed potatoes
2 cups shredded cheddar cheese
1/2 tsp salt
1/4 tsp. pepper
TOPPING:
1 cup butter or margarine
1 cup chopped onion
Preheat oven to 350 degrees F.
Line a 13x9-inch baking pan with a layer of noodles.
CHEESE LAYER:
Mix cottage cheese, egg and 1/4 tsp. onion salt. Spread over noodles and cover with another layer of noodles.
POTATO LAYER:
Mix potatoes, cheddar cheese, remaining 1/2 tsp onion salt, 1/2 tsp salt, and pepper. Spread over noodles and cover with another layer of noodles.
TOPPING:
Melt butter in pan and saute onions until transparent and soft. Pour over noodles, cover with foil.
TO BAKE:
Bake at 350 degrees F for 30 minutes. Let stand 10 minutes before cutting.
It sure beats making the real ones by hand!!!
