Recipe(tried): Pesto Chicken Rice

Pesto Chicken Rice

First, steam/cook up about 6-10 cups of rice. If you don't have a steamer or rice cooker. You can do it on the stovetop in a large saucepan. Put in 1 1/2 cups of water to each cup of rice.

Purchase "Knorr" or "McCormick" Creamy Pesto sauce from local grocery store. Albertsons and Safeway usually carry both brands.
Follow directions on the Pesto packages. Double or Triple the recipe for pesto due to size of family. Usually the Pesto ingredients calls for water and oil. But we use milkand oil, it tastes better. Remember to constantly stir it, you are cooking with milk and it can spoil. Start the pesto about 30 mins. until the rice is done.


Cook up some "boneless, skinless chicken breasts with vegtable oil on Medium Heat in a large skillet. Use some ground garlic salt or Montreal Chicken seasoning or both if you like. Pepper is goodfor seasoning too. wait until the chicken is browned on both sides before it is ready. Start chicken about 15 mins. until rice is done. So you will be flipping the chicken in between stirs of the Pesto.

The rice will take about an hour to cook. Put lid over rice and cook on Medium high heat. Don't lift the lid until the hour is up!!!! This is importatnt. The rice utilizes the steam from the lid. Which helpd the rice cook more throughly. You lift the lid before the hour, you get crunchy rice.

And I think that is it! Scoop up rice onto plate or in a bowl, put on a couple peices of chicken and pour pesto over it and enjoy!
