Recipe: Philly Cheese Burger Wraps (using ground beef or grilled steak slices)

"A no-mess version of a classic sandwich. Make the filling ahead of time."
3 tbsp. butter
1 large onion, thinly sliced
1 large red bell pepper, cored, seeded and thinly sliced
1 large green bell pepper, cored, seeded and thinly sliced
3/4 lb. ground beef (or 3/4 lb. grilled marinated steak, sliced thin)
2 tbsp. steak sauce
1/2 tsp. garlic salt
2 c. shredded Swiss cheese (or pasteurized process cheese spread, such as Velveeta)
6 (12-inch) flour tortillas
Melt the butter in a large skillet. Add the onions and peppers and cook over medium-high heat, stirring occasionally, until the onions are beginning to color (4 to 5 minutes).
Add the ground beef (if using) and cook, stirring to break it up, until all pink color is gone. Remove from heat. (If using grilled steak strips, add them just before serving, to warm them through.)
Add the steak sauce and garlic salt. (Mixture may be refrigerated at this point and reheated to serve.)
TO SERVE:
Just before serving, warm the tortillas for a minute in a microwave oven (loosely wrap the tortillas in plastic), or for 15 minutes at 350 degrees F wrapped in foil in a conventional oven.
Assemble the wraps or let folks assemble their own.
Place about 1 cup of the filling in the center of a warm tortilla. Add about 1/3 cup of the cheese. Fold two opposite edges of tortilla toward center over the filling. Fold the open bottom end of the tortilla toward the top.
