Recipe: Creamy Broccoli Soup (using corn starch) (blender)

CREAMY BROCCOLI SOUP

"Frozen vegetables are the base for this blender-quick homemade soup."

1 (10 oz) pkg frozen broccoli
1 cup chicken broth
1/4 small onion
1 Tbsp Mazola margarine
1/4 tsp salt
1/8 tsp ground nutmeg
1 1/2 cups milk
1 Tbsp Argo or Kingsford's corn starch

In 3-quart saucepan cook broccoli in chicken broth with onion, margarine, salt and nutmeg 5 minutes, just until tender.

In blender container mix milk and corn starch. Add undrained broccoli mixture. Cover and blend at low speed until smooth.

Return to saucepan. Stirring constantly over medium heat, bring to boil and boil 1 minute.

Makes about 3 cups (or 3 to 4 servings)
