Recipe(tried): Piccalilli Reply

10 c. chopped green tomatoes
1 sweet red pepper - chopped
2 green peppers - chopped
3 3/4 c. chopped onions
1/2 c. salt
1 qt. cider vinegar
2 c. sugar
1 tbs. celery seed
2 tbs. mustard seed
1 tbs. horse-radish
1 tsp. cloves

Wash & coarsely grind or chop the first four items. Mix weel with salt; cover & let stand overnight. Drain.

Combine vinegar, sugar & the spices(teid in cheesecloth bag); bring to boil & add the drained vegetables. Bring heat back up to boiling point, but DO NOT BOIL.

Pour at once into hot sterilized jars. Seal immediately. Makes: 2 quarts.
