Recipe: Pineapple Cake
Misc.I found this in my files, but have not tried it. It sounds similar to the one you described.
Pineapple Cake
1 box Yellow cake mix
1 1/3 c Water
4 Large egg whites, reserving 2
2 c Sugar
3 T Flour
1 (20 oz)can crushed pineapple
4 T Margarine, melted
Directions: Prepare cake according to package directions,
using 1 1/3 cup water, omitting oil and using 2 egg whites
in place of eggs. Pour batter into cake pans and bake; cool
completely. Beat 2 remaining egg whites with 1/2 c sugar.
In medium saucepan combine remaining 1 1/2 cups sugar
and flour; stir in beaten egg whites. Mix in pineapple with
juice; stir in melted margarine. Heat over medium heat,
stirring constantly until thickened. Cool; spread frosting
between layers and on top and sides of cake. Yield: 1
2-layer cake
7 Minute Frosting Ingredients:
2 Extra large egg whites
1 c Sugar
3 T Water
1/8 t Cream of tartar
1/16 Salt
1 t Vanilla
Directions: Place all ingredients except vanilla in top of
double boiler; beat at low speed with electric mixer for 30
- 45 seconds or until blended. Place over boiling water.
Beat vigorously with electric mixer for 4 minutes or until
stiff peaks form.. Remove from heat. Add vanilla and
continue beating if frosting is not thick enough to spread.
Spread on completely cooled cake. Makes enough to
generously frost a two layer cake. Yield: About 4 cups
frosting.
