Pineapple Fried Rice

1 pineapple
4 cups long-grain rice, jasmine
3 tablespoons vegetable oil
1 small onion, or scallions
5 cloves garlic, minced
1 tablespoon ginger, minced
1 cup Chinese beans
1/2 cup tomatoes, diced
1 cup pineapple, diced
3 tablespoons fish sauce
1 teaspoon sugar
3 scallion

Serve rice in fresh pineapple. Cut pineapple in half. Hollow out each half, reserving 1 cup of fruit for the rice and extra for garnishing. Heat 2 tablespoons of the oil in a wok or large pan. Coat the pan.

Add the onion and toss until soft, 3-5 minutes add garlic and toss until fragrant and soft, 2 minutes.

Add the ginger and toss for another minute.

Add the remaining tablespoon of oil, then add the rice. Fry for 2-3 minutes then add the beans, tomatoes, and pineapple and fry 3 minutes more. Add the fish sauce and sugar and toss until ingredients are well combined and rice is heated thoroughly, about 5 minutes.

Add the green onions and toss to combine. Serve in hollowed pineapple. Garnish.
