Recipe: Broccoli or Zucchini Puff

Broccoli or Zucchini Puff
From: General Mills/Betty Crocker Bisquick

2 pkg (10 oz) frozen chopped broccoli, cooked and drained (or grated zucchini, uncooked)
1 cup Bisquick baking mix
1 cup milk
2 eggs
1/2 tsp salt
1 cup shredded Cheddar cheese (about 4 oz)

Heat oven to 325F. Butter 5-1/2 cup souffle dish or 1-1/2 quart casserole. Beat baking mix, milk, eggs, and salt with hand beater until smooth. Stir in vegetable and cheese. Pour into prepared baking dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately.
