Italian Stuffed Onions
Servings: 6

8 medium onions
1 teaspoon cinnamon
1/2 lb. ground veal
1 cup grated Parmesan
1 cup raisins
1 cup dry breadcrumbs
1/2 stick (1/4 cup) butter (1/4 in pan, 1/4 in onion centers)
1/4 pint half-and-half cream
4 egg yolks
2 egg whites

Boil onions until tender but do not over cook so they are limp. Scoop out and grind or chop the center of the onions. Add all ingredients and mix well. Be sure to add breadcrumbs last. Stuff onion centers and bake at 350F for approximately 25 minutes. They are done when they have a light brown top to them.
