Recipe: Artichoke Mashed Potatoes

Artichoke Mashed Potatoes

large russet potatoes, cut in chunks
1 sprig rosemary (optional)
3 large cloves garlic, peeled
1 (6 oz) jar marinated artichokes, drained, minced
3/4 cup milk (approximately)
sprigs rosemary for garnish (optional)

Cook potatoes in boiling, salted water with the sprig of rosemary and the garlic.

Discard rosemary; remove garlic and mince; return to potatoes; mash potatoes. Stir in artichokes. Add enough milk in a thin stream, mixing constantly to make a creamy mixture. Salt and pepper to taste. Garnish with rosemary.
