Recipe(tried): Pizza Dough For You
Pizza/Focaccia Here are a couple of recipes I've used a few times. They are all excellent:
Julia Child's Pizza Dough
Recipe By : Julia Child
1 1/2 tsp bread machine yeast
3 cups all-purpose flour
3/4 cup milk
2 tbsp olive oil
1/2 cup lukewarm water
1 1/2 tsp salt
pinch sugar
Place all ingredients in ABM according to manufacturer directions. Dough cycle. Drizzle in a touch more water if necessary to make a smooth ball.
Remove dough onto a floured surface and knead for a few seconds. Place in a greased bowl and let rise until doubled. Remove from bowl and punch down. Cut into 2 pieces and roll out into 4 medium size crusts, enough to feed 4 people.
Turn oven on and preheat at 400 F for 30 minutes, if using pizza stone. If no stone, preheat oven to 400 F for 10-15 minutes. Place pizza crust on the back of a baking sheet that has been covered with a sprinkling of cornmeal. Place in oven and bake for 8 minutes. Remove and cover with toppings. Place back in oven and bake for 8 more minutes until crust is golden and cheese is bubbly.
Linda Stradley's Parmesan Thin Crust Pizza Dough

2/3 c. lukewarm water (I had to add more)
2 c bread flour
1/4 tsp salt
1/2 c. freshly grated parmesan cheese
1 T olive oil
2 tsp. instant yeast
Add water, flour, salt parmesan cheese, olive oil, and yeast to bread machine. Process according to manufacturer's instructions for a dough setting.
Meanwhile preheat the pizza stone or tiles to 450 degrees for 30 minutes. Prepare your favorite toppings.
When the bread machine has completed the dough cycle, remove the dough from the pan to a lightly oiled surface. Knead the dough several times and form the dough into an oval; cover with a towel and let rest for 10 minutes. Roll and stretch the dough into a 14-inch circle. Place the dough on the prepared peel. Brush the dough with some olive oil and layer your ingredients. Bake for approximately 15 minutes or until golden brown on the bottom and the top is bubbly.
NOTES : Linda writes: I've adapted this from a recipe that was originally posted on the Swap on Jan. 11, 1996 at archive 1225.2 - I think that this dough makes the best pizza that I've ever eaten! Try it - you like it!
CPK Honey-Wheat Pizza Dough

1/2 cup lukewarm water -- + 1 tsp
1 tbsp clover honey -- + 1 tsp
1 tbsp olive oil -- + for brushing
1 tsp sea salt
1 cup bread flour
1/2 cup whole wheat flour
3/4 tsp SAF yeast -- OR
1 tsp active dry yeast
Place all ingredients in bread pan according to manufacturer's directions. DOUGH cycle.
When cycle is over, punch dough down. Let dough remain in pan, in machine, turned off, for 1 hour, to rise again. The dough should double in size.
Remove dough from machine to floured work surface. Cut into 4 pieces. Roll into 4 smooth balls. Place in a greased pan and cover with plastic wrap that has been sprayed with oil-spray. Refrigerate over night.
Remove dough from refrigerator. Let come to room temp. Cover and let rise again. Roll each round out into a 7" round crust.
Use for pizza or for calzone.
