This is the pizzelle my mother in law made every year.
Recipe Introduction:
We make these every xmas. My mother-in-law always used a pizzelle iron that you hold over the stove. I use an electric one.
2 sticks oleo (margarine)
2 sticks butter
2 2/3 c. brown sugar
1 c. granulated sugar
6 eggs
1 tsp vanilla
1/2 tsp soda
8 cups of flour
1 shot glass of whiskey*
You can use rum, amaretto, or anise . I have also used orange oil. (about 3 tsp) Do not use orange flavoring.
Mix sugars and butters together. Add eggs and beat together. Add soda, vanilla and whiskey and blend in flour. I mix in 2 cups at a time using the mixer and fold the last two cups in by hand.
Chill several hours or overnight.
Roll into large balls and bake in pizzelle iron. I cool mine on paper toweling.
I have also made these using vanilla flavoring and sprinkled them with a cinnamon sugar mixture. Great with ice cream.
Store in cookie tins or 3 lb coffee cans. These can be frozen also.
