Recipe: Plum Bread (quick bread using baby food)

PLUM BREAD

2 cups sugar
1 cup vegetable oil
3 eggs
2 jars (4 ounces each) jars baby food plums
2 cups flour
1 1/2 teaspoons salt
1/4 teaspoon baking powder
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 cup chopped nuts (optional)

Preheat oven to 350 degrees F. Grease and flour 1 or 2 loaf pans.

Combine sugar, oil, eggs and baby food; set aside.

Combine dry ingredients, add to sugar mixture and mix well. Stir in nuts, if using. Place batter in prepared pan(s).

In 1 loaf pan bread will bake in approximately 1 hour and 15 minutes at 350 degrees F, but times will vary according to pan size and amount of batter in each pan. Test for doneness with a toothpick inserted in the center of the loaf. When it comes out clean, loaf is done. Check at 1 hour.

Makes 1 or 2 loaves
