Recipe: Poor Man's Pudding (2)

: I am trying to find a recipe called Poor Man's Pudding. My husband said he had it when he was a little boy, back in the 50's. Any help would be appreciated.

Here are a couple variations for you. I haven't tried them - let us know how it turns out.

Poor Man's Pudding or Cinnamon Pudding

SYRUP:
2 c. brown sugar
2 c. water
BATTER:
1 heaping tsp. cinnamon
2 tbsp. butter or margarine
1 3/4 c. sifted flour
1 c. milk
1 c. sugar
1 tsp. baking powder
1/2 c. nuts
1/2 c. raisins

1. Boil brown sugar and water together for 5 minutes or just until brown sugar is completely dissolved. Pour syrup into a round casserole or cake pan of desired shape.
2. Mix batter ingredients in a bowl until well blended.
3. Pour the batter evenly over the syrup mixture.
4. Bake at 350 degrees for an hour.
To serve, turn upside down on large serving dish.

Poor Man's Pudding

2 tbsp. butter, soft
1/2 c. sugar
1 c. flour
1 tsp. soda
1 tsp. baking powder
1/2 c. milk
1 tsp. vanilla
1 tsp. nutmeg
1/2 c. raisins

1. Cream butter and sugar. Mix in flour, soda, and baking powder. Stir in milk, vanilla, nutmeg, and raisins.
2. Cream 3/4 cup brown sugar and 4 teaspoons butter. Put over mixture.
3. Pour 2 cups of boiling water over all and bake at 350 degrees for 25-30 minutes.
